2 large heads of broccoli, which makes this dish extra yummy, broccoli florets should be taken off the head. These florets should be the equivalent of 4 cups of this cruciferous vegetable that is oh, so yummy!
small handful of dried cranberries for a little sweetness
small handful of toasted pecans for that nutty toasted nutty flavor
About 1 Tablespoon grated Parmesan, do not do a whole Tablespoon or it may be too much cheese and some people don't like the taste of that much cheese.
1 squeeze fresh lemon juice this will provide a sour acidic taste that goes so well with broccoli.
Sea salt and freshly ground black pepper. There is no set amount because what may appeal to my tastebuds may overwhelm yours. Put however much of both you want in this delicious sidedish.
You need a steamer basket for this recipe because the broccoli isn't already steamed and cooked like it is when you thaw out frozen broccoli.
First, take your steamer basket and put it in a medium sized saucepan that has 1/2 cup water.
at this point the broccoli should be put in the basket, then the heat should be turned up to high after you cover the saucepan. Wait until the water boils then keep your eyes on the pot because it will only take a few minutes to steam, but make sure the water is boiling before you keep track of those several minutes. If the water doesn't boil then the broccoli won't steam!
After you let the broccoli steam, take it out of the steamer basket and put the broccoli in a large bowl.
Add some sweetness to your life by adding to the broccoli some cranberries, Parmesan and lemon juice, then you toss it. Then put just enough salt and pepper that you enjoy the taste very much.
This savory side dish can be served warm when it is best or if you put it in the refrigerator if you made it the night before or you are eating leftovers, then take out of the cold refrigerator and let it heat up to room temperature before attempting to eat it.

Bobby Flay's Queso Fundido with roasted poblano vinaigrette
Here is a taste bud pleasing recipe from the Food Channel's own Bobby Flay. Whenever Bobby Flay creates a recipe one can almost be sure the family is going to ask you to recreate it again and again after the first time you make it for them. And this recipe has a spark to it with having roasted pablano peppers that are sure to make your mouth feel on fire and, yet ever taste oh, so good!
FOR THE VINAIGRETTE
2 pablano chili peppers that will give your queso a little kick
1 Tablespoon red wine vinegar which will take out some of the heat of the poblano chilies.
1 Large clove garlic chopped (this part is good for you because of all garlics medicinal benefits.
1 teaspoon honey so you can give it a sweet taste for your family members that have a sweet tooth.
1/4 cup canola oil
kosher salt and freshly ground pepper Kosher salt has a beautiful texture and when you get that texture into your mouth, it is a lot better than table salt
FOR THE QUESO FUNDIDO
1 Tablespoon unsalted butter all the better for those watching their blood pressure because salt which is sodium can cause your blood pressure to rise.
1 Tablespoon all purpose flour which brings it all together
1 cup whole milk to make it deliciously creamy
3 cups of monterey jack cheese making sure it is grated so as to melt easier. If you put in a block of cheese, you would have to wait around for the cheese t melt for what feels like forever.
Kosher salt and freshly ground pepper
8 ounces goat cheese and cut with a good chefs knife into 8 rounds,
2 Tablespoons chopped fresh cilantro This will give your queso a spicy taste. And cilantro goes very well with the ingredients and by the time you read this recipe your mouth will be watering.
To be festive, especially if you are serving this for a party, use tortilla chips of different colors for this recipe.
A. Make a fanatstic tasting vinaigrette, It may sound high and get it hot in the kitchen but it is neccesary to now preheat the oven to 425F. Place plobanos on a baking sheet, the same sheet in which you would delight your family with homemade cookies, put them in the oven for 15 minutes and roast, being sure to turn them so that they can get evenly roasted, about 15 minutes. The the poblanos should be placec in a bowl and let it sit there with it being covered at the same time. Now is the only time your mom would give you permission to play with your food, by peeling the pablonos with your fingers. These pablanos should be cut in half, and roughly chopped after you seed them.
B The poblanos, when they are roasted, should be combined with the flavorful garlic, tar vinegar, honey for sweetness, canola oil and 2 Tablespoons plain water and place them all in a blender; then you will puree until smooth. Now is the time to season to taste with the kosher salt and pepper. Be aware kosher salt is much more bigger in form than table salt so you will not want to use as much of kosher salt as you do for table salt because a 1/4 teaspoon of kosher salt is a lot more than the 1/4 teaspoon of table salt which has very small grains.
C. MAKE THE QUESO FUNDIDO
Now get out your medium saucepan, no use in having to wash a big saucepan and snyway this medium one will make it look like a lot more fooling your eyes into thinking you are eating more then you will eat less and lose weight! Melt butter in the saucepan over medium heat. High heat has a tendency to burn this dish and low heat will never melt the cheese we are going to add in this step' add flour and cook and get ready to enjoy a Heavenly tasting cheese dish, And while cooking whisk 1 minute. Then keep out that whisk and cook, whisking until slightly thickened which on average should last 5 minutes. The monterey jack cheese is stirred in now, after you turn off the burner on your stove. 1/4 teaspoon salt should be added and pepper should also be added . Turn on the broiler.
D. The reason you have to heat your broiler is that you are now going to pour the cheese mixture getting cheese off sides and bottom of pan and then put it into an 8 inch round cast iron pan. Then pretending you are decoarting your home office arrange on top of the cheese the rounds of goat cheese. Broil, and keep it broiling until you have some golden brown spot in places. Don't keep it in as long as getting the entire top golden brown because then you burned your dish. Drizzle with the vinaigrette and sprinkle with cilantro. Serve with all those beautiful colored tortilla chips.
